Sweet Potato & Zucchini Cupcakes

I failed my driver's licence test on Wednesday. I'm taking it again next Wednesday. On the upside, I have been trying to spend some quality time with my Rebel T1i and decided to bake some cupcakes yesterday and finally got around to frosting the first batch which I'd put in the freezer yesterday. They're sweet potato & zucchini cupcakes, with cocoa frosting and almonds on top. Made from scratch, obviously, because I'm a food snob.

I have to confess that when I first read sweet potato and zucchini cupcakes it did not sound that appetizing. But after seeing the photographs it really does look delicious.

I understand how you feel. A few years ago, I wouldn't have touched a cupcake with any kind of vegetable in it. But sweet potato and zucchini are perfect in muffin and cupcakes. They basically taste like zucchini or pumpkin bread; they're just cuter.

Thanks, Hannah! It's really unfortunate that shopterrain doesn't accept international orders. There were so many lovely items in their store.

I'm going to type the recipe in the next couple of days, I'll let you know when it's up. The cupcakes were delicious, but I think I should have grated the sweet potatoes instead of pureeing them.
